Our Story

Originally from Niagara, Ontario, and raised in a region celebrated for its natural beauty and farm-to-table culture, Matthew Bilinski’s path to the culinary world seemed almost destined. What began as a strong passion for art eventually evolved into a love for the kitchen, as he discovered he could express his creativity just as vividly through food as he could on canvas.


Now, Matthew has embraced independent ventures as the President of the Funky Fork Culinary Group, bringing his cuisine and curated experiences directly to guests. Whether at the soon-to-open Landing @ Bass Lake or through private events with Funky Fork Culinary, Matthew and his team relentlessly pursue excellence, continually striving to exceed expectations and craft unforgettable culinary experiences.

Matthew pursued a degree in Culinary Arts at a prestigious institute in Vermont, USA, where he honed his craft, developed his unique style, and cultivated a deep appreciation for avant-garde cuisine. He learned early on that cooking was about more than sustenance—it was about precision, quality, and crafting memorable experiences.


His career took him from exclusive restaurants and luxury hotels in Montreal to the international stage, starting in Abu Dhabi with the opening of Sofitel Abu Dhabi Corniche. In Dubai, he quickly built a reputation for innovation and distinction, becoming one of the youngest Executive Chefs in the Emirates at just 25 years old at Kempinski Hotel & Residences Palm Jumeirah, followed by his tenure as Chef for the Royal Family’s Polo Club. Matthew then concluded his international hotel journey in the Maldives at the Four Seasons Kuda Huraa, a fitting finale to a chapter defined by global culinary excellence.


Returning to Canada, Matthew became Culinary Director at Taboo Muskoka and later Executive Chef at Port Carling Golf & Country Club, one of Muskoka’s premier dining destinations. Over the years, he trained under some of Europe’s most influential culinary leaders, refining his technique and shaping the distinctive style he is known for today.

Now, Matthew has embraced independent ventures as the President of the Funky Fork Culinary Group, bringing his cuisine and curated experiences directly to guests.
